A prestigious gala dinner, a high-profile Indian clientele and an exceptional culinary signature. For this event, Pavillon des Chefs welcomed a brigade of renowned Indian chefs, recognized and respected figures of their country's gastronomy, to its production laboratory in Mouans-Sartoux.

The principle is simple: their recipes, our expertise, our production facility. We worked behind the scenes as a white label caterer, so that Indian cuisine could shine on the night of the gala. This concept sumps up what we do: making a 2,000 m² culinary laboratory available to chefs, whatever their cuisine.

The Concept: A Culinary Laboratory Supporting an Independent Brigade

A Subcontracting Partnership, Designed for the End Client

Our client, the organizer of the gala dinner, wanted authentic Indian cuisine, prepared by their own chefs. What they lacked was a large-capacity professional kitchen, compliant with food safety standards and close to the venue.

Pavillon des Chefs stepped in discreetly as a subcontractor. The end client sees their chef's signature; we provide the infrastructure, organization and technical support. This is the essence of white label catering: our name stays behind the scenes, while the quality shows on the plate.

Renting a Culinary Laboratory: A Turnkey Professional Facility

Renting a culinary laboratory allows an external brigade to work in ideal conditions, without investing in temporary equipment. For this gala dinner, the Indian chefs had access to:

  • dedicated cooking and preparation stations;

  • chilled and frozen storage rooms for ingredients;

  • plating and packaging areas;

  • a HACCP protocol supervised by our teams.

Traditional Indian Cuisine, Reinterpreted for a Gala Dinner

The chefs created a menu rooted in India's great regional culinary traditions, reworked to meet the standards of a gala dinner: precise cooking, refined seasonings, plated presentation and consistency throughout the service.

Our role: to give them a production facility that matches their high standards. Sourcing fresh local produce, managing workflows, organizing cooking and cooling times: every step was planned to give their creativity free rein, on the scale of a gala service.

Our Expertise Behind an Exceptional Gala Dinner

Anticipating the Logistics of a Gala Dinner

A gala dinner leaves no room for error. Ahead of the event, our teams worked with the Indian brigade on:

  • the production schedule

  • the reception and storage of ingredients, including imported spices;

  • the layout of workstations to keep workflows separate and prevent cross-contamination;

  • hot-holding or chilled transport to the venue.

Two Culinary Cultures, One Shared Standard

Bringing an Indian brigade and a French team together in the same laboratory is above all a matter of respecting each other's methods. The Indian chefs kept full control of their recipes; our teams contributed their knowledge of the facility, the regulations and the local area.

This collaboration led to some wonderful moments of sharing in the kitchen.

Hygiene, Traceability and Food Safety

Producing for a high-profile event demands absolute rigor. Our production laboratory ensures compliance with food safety regulations, full traceability of ingredients and strict cold chain management, a reassuring framework for both the client and the guest chefs.

Why Rent a Culinary Laboratory for Your Event?

This Indian gala dinner reflects an increasingly common request: chefs, caterers or agencies who have the recipes and team, but not the kitchen. Renting a professional culinary laboratory means:

  • producing at volume without setting up a temporary kitchen;

  • ensuring food safety compliance across your production;

  • saving time with a facility that is ready to use as soon as the brigade arrives;

  • keeping your own culinary signature, under a white label;

  • benefiting from local support on the French Riviera, between Cannes, Nice and Monaco.
